Preparing your herb garden during winter is an ideal time because the ground is dormant. It’s best to plant herbs in a sunny, south-facing spot with a bit of protection from north and east winds to grow well in hot, dry conditions.
South-facing slopes are ideal, because they offer a variety of planting locations.
Ordering seeds and plants
Once you decide what shape and size you want your herb garden to have, order seeds and plants for the spring. Although many herbs can be grown from seed, others won’t grow correctly from seed, so it’s important to purchase plants from a reputable herb nursery to ensure you obtain the correct sort.
